A member of the chicory family, which includes the red cabbage-like-looking “radichhio”, escarole can be described as slightly bitter. But the sweetness too! Oh– the sweet crunchy light green hearts make a lovely salad (with parmesan, bacon bits,a balsamic vinaigrette). The outer dark green leaves are sublime in a white bean escarole (and sausage) soup .
