Spinach

This heavily savoyed (crinkled) variety is delicious, and much preferred to the more common flat-leafed types available in stores. Crunchy, sweet, and meaty. We’ve washed it, but you should wash this low-grower again. Terrific raw in salads (with roasted potatoes and bacon on top!) or cooked in ‘creamed spinach’, frittatas, omelettes, soups, and stir-fries. Stuff some in a grilled cheese sandwich before or after cooking.
